Dinner tonight will be Bubble and Squeak. It’s one of my favorite peasant dishes. Brown some bacon, remove from the drippings, drain and crumble. Sautee a bit of onion in the bacon drippings. Add potatoes and cook tender, then top with shredded cabbage. Cover and let it bubble and squeak until the cabbage is tender and the bottom a bit crispy. Sprinkle the top with the bacon crumbles and some sharp cheddar.
Yum. I can hardly wait!
